Luscious Lemon Bars

I admit it, I'm really picky about lemon bars

I love lemon anything, but not all lemon bars are created equal! After years of searching, I finally found the perfect recipe.
{Shared with permission from my domestic goddess friend, Katie - who is an EXCELLENT cook.}




A single recipe fills a 9x13 inch pan. 

Crust:
  • 1 cup softened butter
  • 2 cups flour 
  • 1/2 cup powdered sugar
Mix together & bake 20 minutes at 350 degrees.

Filling:
  • 4 whole eggs
  • 2 cups sugar
  • 4 tablespoons lemon juice {bottled is fine}
Combine filling ingredients with a mixer until sugar is dissolved. 
When crust is baked, add filling mixture. {Crust does not have to cool first.} Return to 350 degree oven & bake 30 minutes longer. 

Cut into squares after cooling & sprinkle with powdered sugar.
