A Cool Fruit Salad . . . For Those Hot Summer Days

We've been having such a warm summer
& it has made me crave COLD FOOD!

When I recently attended an outdoor potluck picnic,
this delightful cool fruit salad was a natural choice.
By the way this is literally one of the most 
delicious things I have EVER put in my mouth!
{The recipe is from my Domestic Goddess friend, Cathy.}


I served it in an "ice bowl" to ensure the salad 
stayed cool & refreshing . . . 
*Pretzel Fruit Salad Recipe*
  • 1 1/2 cups pretzels, broken
  • 1/3 cup butter
  • 1/2 cup sugar
Melt butter & sugar. Add pretzels & mix well. Bake on an aluminum foil covered jelly roll pan in 350 degree oven for about 8 minutes. Cool & set aside.
  • 1/2 cup sugar
  • 8 oz. softened cream cheese
  • 20 oz. crushed pineapple, drained
  • 8 oz. mandarin oranges, drained
  • 8 oz. Cool Whip
Cream sugar & cream cheese with a mixer. Fold in pineapples, Cool Whip, & mandarin oranges. Fold in pretzels just before serving.

NOTE: Does not keep for more than a day {the pretzels get soggy!}
