A Cabin Getaway & Dutch Oven Potatoes - YUM!

Golly! I've been so busy, that I 
PLUM FORGOT to host a Fab Friday Party.

We had a wonderful weekend here . . .


Enjoying great food, family togetherness, &
the beauties of nature.

Let's talk about my {dear} sister's 
Dutch Oven Potatoes.
{She really is one of the best cooks I know!}

- As you can see, I heart her very much! - 

First, she slices a yellow onion,
then peels her potatoes.
Not too perfectly - she likes a little skin showing because it gives them
that country/home-made look.
Sis plans on a potato per person.


She puts some vegetable oil in her dutch oven
& uses a paper towel to spread it around.


Next, layer the onion & potato slices {not too small}
in the dutch oven . . . and put some butter pats in there as well!
{She used a stick or a 1/2 cup butter.}
Top with salt, pepper & some dried parsley.
Here it is ready to cook . . .


Cover & cook over charcoal briquettes . . . 


Stir every once in a while.



So delicious!
We ate them with these pre-marinated
tri-tip roasts from Costco.  


My guys spent a lot of time on these . . .


And afterward looked like this . . .

We celebrated Christian's birthday &
 Sam really enjoyed being a "country dog"!

- Bro & Sis enjoying a beautiful summer day on their swing -

Wish we could spend all summer there!

  5. I just got back from my cabin getaway in Utah. We have one in Strawberry, near Strawberry resavoir. and we also had dutch over potatoes with bacon and onion and cheese. Oh so yummy!!!!
    It was great being in Utah and taking a break from our regular 110 degree heat here in AZ!
    Now back to heat, going to the pool and hubby has to go to Columbia for a week! Yuck!!!!
    Vacation sadly over :(
