Santa's Favorite Cookies

I've been baking the most
delicious chocolate chip cookies!

The recipe calls for chocolate chips, but I use these 
chocolate "disk-thingys" from my local baking store.
{I think they are meant for candy-making. When I bought them,
the staff at the store said they wouldn't work for cookies. 
Guess what? THEY DO!}

Let that be a lesson to us -
don't let people stomp on your dreams!

Chocolate Chip {or chunk} Cookies

  • 1 1/2 cups sugar
  • 1 1/2 cups brown sugar
  • 1 cup butter, room temperature
  • 1 cup butter-flavored shortening
  • 2 Tbsp. vanilla
  • 4 eggs
  • 2 tsp. salt
  • 2 tsp baking soda
  • 5 1/2 cups flour
  • chocolate chips or disks
Cream sugars with butter & shortening. Add eggs, vanilla, salt, & baking soda. Mix well. Add flour a cup at a time. The dough will be very soft. Hand mix in the chocolate chips or disks last. {I use a lot - there are about 3 disks in every cookie.} Bake at 375 degrees for 10 - 11 minutes. TIP: THE HARDEST PART IS NOT OVERCOOKING THEM. When it is time to take them out, they don't look brown or done. But the cookies will continue to cook after they are removed from the oven. They are best when they are soft & gooey.

because they don't last long enough to photograph them.
