Hearty Taco Soup

Here in Utah, our favorite season is upon us & that means hot cocoa, cozy evenings at home, & hearty soup! Taco soup is one of our favorite soup recipes. It is always a hit when I make it to share with someone & it is one of my son, Christian's favorites. Sis just made it for us when we visited her cabin in the mountains. It was delicious!



BTW, I call this a "dump" recipe - it is mostly opening cans & dumping it in a pot! Of course you can add more heat by increasing the chili powder or adding hot sauce. THIS RECIPE MAKES A LOT - I OFTEN HALF IT!

Hearty Taco Soup

  • 1 lb. lean hamburger meat 
  • 1 onion, minced
  • 1 tablespoon minced garlic (from a jar)
  • 1 large can tomato juice
  • 1 cup water
  • 1 can tomato soup
  • 2 cans vegetable soup
  • 1 can kidney or black beans, drained
  • 1 pint salsa
  • 1 tsp. dry taco seasoning
  • 1 tsp. chili powder

Brown hamburger meat with onion & garlic. Drain. Place all ingredients in a crock pot & cook on low for about four hours. {It can be cooked in a pot on the stove, but if it cooks for a long time in a crock pot, the hamburger meat becomes nice & tender.} Serve with sour cream & Frito chips.
